Connect with local businesses, communities, farms, and non-profits in your area. See if there is a problem of excess harvest apple waste, and if so, see if you can arrange to collect some of that. When soliciting from businsees, it may help to partner with a non-profit or church, so donations can be deducted off taxes.
Rinse off apples. Peel stickers, if needed.
This works great with a mandoline slicer. Use with a guard for bodily safety.
Make your own preservative brine for sliced apple pieces. Have brine be vinegar based to prevent spoilage.
Layer slices into dehydrator sheets. Dehydrators can be very easy to borrow long term from neighbors and friends. Dry at 12 hours at 135F.
Preserve the fresh crisp on every chip by sealing in a plastic bag.
Keep surfaces clean. Wash hands. Wear gloves when handling ready to eat chips to be bagged.
